Turkey sweet potato omelette

I found this recipe online for a sweet potato and turkey skillet meal (link to recipe below). We had it for dinner last night and loved it. I had some left over so decided to make an omelette with it this morning. OH EM GEEEE!! This was a wonderful breakfast. I will definitely make the skillet meal again and will double the batch to have extra for more super tasty omelettes.

Macros for omelette: 201 calories, 6g carbs, 9g fat, and 23g protein

The turkey sweet potato skillet meal made 5 servings for us. For the omelette I used about 1/3 to 1/2 of a serving. I heated it for 20-30 seconds in the microwave while I cooked the egg

Ingredients
4.5 TBSP of liquid egg whites
1/4 cup shredded Italian cheese blend
Mrs Dash table seasoning
dried Parsley
1/3-1/2 of a serving of skillet meal

Directions
Heat skillet meal mixture for 20-30 seconds in the microwave while the egg whites cook

In a non stick skillet (I use my Orgreenic skillet) spray with cooking spray and heat to low-medium heat. Pour egg whites into pan and season with Mrs Dash. Cover the pan with a lid and then DO NOT TOUCH OR MOVE THE PAN. Let cook 3-5 minutes or until the center is firm and not runny.

Remove lid and add cheese in a strip down the middle of the round cooked egg. Replace lid on skillet and turn off the heat. Let sit for a minute so cheese begins to melt.

Remove skillet from stove top and gently slide egg onto your plate. Add the warmed skillet meal mixture on top of the cheese strip, then fold the two sides over to create a burrito looking egg wrap. Sprinkle a bit of dried parsley on top and ENJOY!!
