Breakfast veggie tot casserole
Makes 8 servings. Macros per serving: 260 calories, 14g fat, 12.5g carbs, 21g protein
Ingredients
- 6 eggs
- 1 9.6 oz package cooked Jimmy Dean turkey sausage crumbles
- 1 cup Fairlife skim milk
- 16 oz Green Giant broccoli veggie tots
- 2 cups shredded 2% sharp cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Grease a 9 x 13 casserole dish.
- Spread sausage onto greased casserole dish.
- In a large bowl, beat together milk, eggs, salt and pepper.
- Cover the sausage in the casserole dish with the egg mixture.
- Cover with one cup of cheese.
- If you will be serving this the next morning, cover and refrigerate at this point.
- In the morning: Spread 16 oz of tots on top of the cheese.
- Add the remainder of the cheese on top.
- Bake for 40 minutes at 350 degrees or until knife in the center comes out clean with no liquid
