Breakfast veggie tot casserole


I'm seriously in love with the Green Giant Veggie tots. All varieties are wonderful cooked in the air fryer, however I love finding ways to make-over recipes, using healthier ingredients. So I decide to give the tater tot breakfast casserole a make-over using the veggie tots. I used the Broccoli veggie tots, but you could use any of the flavors. This was delicious!! It keeps well for several days in the fridge, making a quick easy breakfast by just popping a serving in the microwave. This is a go-to fav in our breakfast rotation. 

Makes 8 servings. Macros per serving: 260  calories, 14g fat, 12.5g carbs, 21g protein






Ingredients
  • 6 eggs
  • 1 9.6 oz package cooked Jimmy Dean turkey sausage crumbles 
  • 1 cup Fairlife skim milk
  • 16 oz Green Giant broccoli veggie tots
  • 2 cups shredded 2% sharp cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease a 9 x 13 casserole dish.
  3. Spread sausage onto greased casserole dish.
  4. In a large bowl, beat together milk, eggs, salt and pepper.
  5. Cover the sausage in the casserole dish with the egg mixture.
  6. Cover with one cup of cheese.
  7. If you will be serving this the next morning, cover and refrigerate at this point.
  8. In the morning: Spread 16 oz of tots on top of the cheese.
  9. Add the remainder of the cheese on top.
  10. Bake for 40 minutes at 350 degrees or until knife in the center comes out clean with no liquid
  11. Enjoy!!
