Buffalo Chicken Bites
An easy dish to make ahead for the week. Full of flavor and you can make it as spicy or as mild as you'd like.
Nutritional info per mini bite: 37 calories, 1.7g fat, 0.4g carbs, 4.5g protein
Ingredients:
2 12oz cans of chicken reduced sodium
4oz Neufchatel cream cheese
1/4 cup 2% shredded sharp cheddar
2 large eggs
2 tsp dry ranch salad mix
1/4 cup Frank's Red Hot buffalo sauce
Mix all together in a bowl and fill mini muffin tins. My batch made 30 mini bites. Cook in a preheated oven at 400° for 15-18 minutes or until golden brown
