Turkey Stir Fry

Ingredients
1.25 lb ground turkey
¼ cup all-purpose flour
1 cup beef broth
3 tbsp honey
¼ cup reduced sodium soy sauce
½ Tbsp ground ginger
2 medium garlic cloves, grated
1 Tbsp extra virgin olive oil divided
1¼ lb broccoli
Half red onion diced
1 yellow bell pepper chopped
1 cup sugar snap peas
Brown ground turkey and drain. Set aside.
To make the sauce: in a bowl mix flour, 1 cup chicken stock, 3 tbsp honey, ¼ cup soy sauce, ½ Tbsp ginger, 2 cloves grated garlic and stir until smooth. Set aside.
Heat a wok or large heavy-bottomed skillet on medium high heat and add 1 Tbsp olive oil. Once oil is hot, add veggies to the pan and stir-fry 4 minutes, or until softened. Stir the sauce again then pour it your hot vegetables. Bring to a boil over medium heat, stirring constantly. Simmer 2 minutes or until sauce is thickened then toss in turkey and cook another 30 seconds or until heated through.
Serve over roasted cauliflower rice.
