Strawberry cream cheese muffins

Makes 8 muffins



2 eggs
1 cup almond flour/meal
1/2 cup Splenda
1 scoop strawberry protein powder
1/2 cup almond milk
2oz Neufchâtel cheese diced
1 tsp strawberry extract 
1 tsp baking powder 
8 medium strawberries diced
1 tbsp Splenda on berries - let sit til dissolved 

Preheat oven 375
Mix all ingredients except berries. Gently fold them in after batter is mixed. Spray 8 muffin tins with cooking spray or use foil cupcake liners. Bake 15-18 minutes or until toothpick comes out clean. 

Store in fridge to last longer. 

Nutrients per muffin with ingredients I had 
are 138 calories, 10 fat, 4.5 carbs and 7.8 protein.
