Cauliflower tot casserole


Wonderful dish makeover. I used to make a tater tot casserole all the time before surgery. Big favorite in our household but it's loaded in carbs and those don't fit the Bariatric plan. I decided to give the recipe a makeover using healthy ingredients. Green Giant has a new product to sub for the tater tots - cauliflower tots. Brilliant idea!! So it's the perfect time to give the ingredient swap a try. 

Servings: 6  Macros per serving: 277 calories, 12.6g fat, 17.8g carbs and 20.2g protein


Ingredients
1 lb ground turkey (93% lean/7% fat) 
1 bag Green Giant cauliflower tots
1 can 98% fat free cream of mushroom soup
1 4.5 ounce jar sliced mushrooms 
3/4 cup 2% shredded cheddar cheese 

Brown turkey with seasoning of choice. I used a salt free zesty table blend seasoning. (I even added some diced onions). Drain fat 




Place meat on bottom of sprayed casserole dish and add drained mushrooms on top 


Layer entire bag of frozen veggie tots on top of the meat and mushrooms. 

In a separate bowl, add enough water to the soup so it's thin enough to pour or spread , covering all of the tots 


Bake 45 minutes at 350°. (With 15 minutes left on timer, add the cheese on top)
