Unstuffed cabbage rolls
If you like cabbage, this is a very tasty meal. I like mine spicy so I added sriracha sauce and green Tabasco sauce but of course you can omit that.
1.5-2 lbs ground beef or turkey
Tbsp EVOO
1 cup diced onion
1 small can diced green chilies
3 tsp garlic paste
1 small cabbage chopped (5 cups)
2 - 14.5 oz can no salt added diced tomatoes
1 - 8 oz can no salt added tomato sauce
1/2 c water
4 tbsp bacon crumbles
2 packets organic stevia
Salt and pepper to taste
In a large pot cook meat (I used ground turkey) and onions until meat is no longer pink and onions are soft. Add garlic paste and cook 1 more minute. Add chopped cabbage, tomatoes, tomato sauce, salt and pepper and stevia. Gently stir it all together to incorporate. It gets easier as the cabbage heats up and starts to wilt. I then added a splash of sriracha chili sauce and green Tabasco to add heat but you can omit. Bring to a boil, Cover and simmer for 20-30 minutes.
Makes 8 servings but I could only eat a cup, about 1/2 a serving. The photo is of 4oz bowl. I was able to eat 2 of those.
