Wanton Taco Casserole

Delicious taco casserole dish using wanton wrappers instead of tortillas. It's assembled in layers like a lasagna. This makes a great dish to meal prep for the week and place each serving in individual containers for the week. Just heat and eat.

Makes 8 servings. Macros per serving: 248 calories, 9.5g fat, 17.5g carbs, and 23.5g protein




Ingredients


12 Wanton wrappers
1.25 lb Lean ground turkey (93/7)
1 packet reduced sodium taco seasoning
1 medium onion diced
4 green onions diced (optional)
1/4 cup chopped cilantro (optional)
1.5 cups fat free refried bean (thinned out with water so they are spreadable)
1/2 cup salsa (I used Herdez mild salsa)
1.5 cup shredded 2% mild cheddar cheese

 



Place wanton wrappers on a cookie sheet, spray with cooking spray on both sides. Place in oven at 350є for 4-5 minutes to toast them to make crisp. Watch closely as to not burn. Flip them over to be sure both sides brown.

In a skillet, brown the ground turkey with the diced white onion and taco seasoning. Add a bit of water to get the seasoning to mix with the meat completely. Drain the fat and set aside. Spray casserole dish with cooking spray and gather all ingredients together ready to assemble.

Place 6 of the toasted wanton wrappers in the bottom of the dish. 




Next layer is half of the meat, half of the beans, half of the salsa and some green 
onions and cilantro. Top with 1/2 cup of the cheese.



Place remaining 6 toasted wanton wrappers as the next layer.




Next layer is the remainder of the meat, the beans, salsa, green onions and cilantro. 


Then top with remaining cup of cheese. 



Bake for 30 minutes or until cheese is melted and barely brown.
If cheese begins to brown too quickly, you can cover with foil for remainder of the cooking time.
