Protein Energy Bites

These are super tasty, like candy so it makes them dangerous. If you have trigger foods, then I would avoid these. However these have been a fantastic pre-workout energy bite. They are definitely not a replacement for your protein bar since they do not have as much protein as a typical bar.

Next time I will double the protein powder because the mix turned out really soft so I think the extra protein might stiffen the mix. These did stiffen up after refrigeration for 24 hours


Made 20 pieces
Macros per piece as listed below: 105 calories, 4g fat, 15g carbs, and 4.6g protein. 

  • 3/4 cup PB2
  • 2 tablespoons coconut oil
  • 1/3 cup honey (I used sugar free imitation honey)
  • 1 teaspoon vanilla extract
  • 2/3 cup vanilla protein powder (2 scoops of BariEssential Vanilla)
  • 4 packets of instant oatmeal (I used Quaker Lower Sugar Maple & Brown Sugar as it's what I had on hand)
  • (2) 1oz boxes of dried cranberries 
  • 1/4 cup chopped pecans
  • 2 tablespoons sugar free chocolate chips + 1 teaspoon coconut oil

Mix the PB2 with water as directed on package. Then place honey, vanilla and coconut oil in bowl with PB2 and microwave 30-45 seconds.  Whisk together until smooth. 

Add protein powder and mix until well combined, then mix in oatmeal, cranberries and pecans 

Spread in a 8x10 casserole dish lined with parchment paper (I didn't have any and used foil which it was very sticky - would be much easier with parchment paper)

Melt chocolate chips and coconut oil in microwave for 20-25 seconds and stir until smooth. Microwave in 5 second increments if needed to melt all the way. Be careful not to over heat. Then drizzle over bars. Sprinkle a little salt on top of chocolate. 

Refrigerate for an hour. Cut into 20 pieces. I folded each piece to make a log piece since it was so soft, keeping the hard chocolate on outside to make pieces easier to pick up.
