Chicken Fried Cauliflower Rice


Ingredients 
1 lb chicken diced 
Small bag frozen peas and carrots 
1 Bag of frozen cauliflower rice
1/4 cup low sodium soy sauce
1 tbsp Splenda brown sugar 
2 tsp Garlic
2 tsp minced ginger
2 eggs (I used liquid egg whites)

Cook chicken and garlic until about half done. Then pour in peas and carrots and ginger and finish cooking until done. While thats cooking mix together soy sauce and brown sugar. Once the chicken is done  Push everything to one side and Scramble the eggs.  Pour in cauliflower rice and soy sauce  mixture and mix well.  Cook it about 7 more minutes or until everything is hot!  Super yummy!!

Love this so much, I don't even miss the starchy rice 
Macros: Makes 4 pretty large servings 259 calories, 1.4g fat, 21.2g carbs and 30g protein
