Italian chicken

Found this recipe on Pinterest which spoke of using ricotta cheese but the link  to recipe didn't include it and used flour. So I tried my stab at adding ricotta and omitting the flour and it was super yummy.

(My version) ingredients:
4-5 roma tomatoes chopped
Two sliced cloves of garlic or 2 tsp garlic paste
Small jar of artichoke hearts drained & quartered
A few tablespoons of extra virgin olive oil 
S&P to taste 
2 tsp Italian seasoning 
1 teaspoon of Splenda
1 c part skim ricotta cheese
4 4oz Boneless skinless chicken breasts (seasoned with S&P)
2/3 c Mozzarella cheese 
Fresh basil

In a mixing bowl mix together the chopped tomatoes, quartered artichokes, garlic, ricotta cheese, Italian seasoning, EVOO, Splenda and S&P. 

Place chicken in greased casserole dish and place mixture on top, covering all the chicken. 
Bake at 350 for 30 minutes

Remove from oven and top with mozzarella cheese. Return to oven for 3-5 minutes to melt cheese. Then turn oven to broil to brown cheese. Watch carefully to not burn, it browns fast. 

Remove from oven and top with fresh basil and it wilt from the dish's heat.  

Makes 4 4oz serving or 8 2oz serving for those who've had WLS.
