Peanut butter cookies

This recipe is an adaptation from George Stella. I added protein powder to increase the macros.


It's a nice treat to keep me from going to the bad stuff. They are bit dry - maybe it's my mind wanting a glass of milk with peanut butter. Oh the days of drinking while eating LOL. Just chew slow and small bites and you should be fine. 

Recipe makes 16 cookies
Preheat oven 350

Ingredients 
1 c no sugar added, natural peanut butter
1 c a Sugar substitute 
1 egg slightly beaten
1 tsp vanilla extract 
1 scoop vanilla protein powder (I used Quest)

Mix all ingredients in bowl. Mixture will be thick creating a dough mixture. If too dry you can add splash (1-2 tbsp) of almond milk to help blend protein powder completely. 



Roll spoonful of dough into balls and place on cookie sheet with parchment paper. Use a fork to press down cookie to create a criss-cross pattern on each cookie. Bake 10-12 minutes or until brown. Remove from oven and let cool on cookie sheet 10 minutes before trying to move cookie. It will crumble if still hot.
