Mexican omelet

I really like the spices and flavorings of Mexican food so I've make a omelet that incorporates those flavors.


3 tbsp liquid eggs whites
1/4 c turkey sausage crumbles
2 tbsp rotel tomatoes 
Mrs Dash fiesta lime seasoning
1/4 c 2% shredded cheddar cheese



I cook mine on a med/low setting of 4. Spray a small non stick skillet with Pam and add egg whites. Add all ingredients except reserve a bit of the cheese to go on top at the end. 

The key to making an omelet is to let is set and firm up without touching it. Once the edges seem firm, I flip one side over with spatula to form a half circle. Let it cook another minute, then flip it over. Add remaining cheese on top and continue to cook 1-2 minutes until done. 

This is my go-to breakfast because it's protein packed. I will make different variations by changing the add in ingredients.
